Food this week - 6.29.14-7.5.14

Lunches:

Arugula, Peach & Cheddar salad
Green salad w/strawberries

These should look familiar by now, I've been making them for the last few weeks, but they're SO good and the ingredients are all in season, so there's no reason to stop making them.

Dinners:

Skillet Hash with spinach
Firehouse Frito Pie

I still haven't made the tomato-basil sauce from last week's menu. The crockpot enchilada soup made WAY more than expected, so we're still working through it. We'll also probably make burgers and pasta salad for our "Stay-in-and-stream-Netflix" Fourth of July celebration. Not sure yet...

Food this week - 6.22.14-6.28.14

I have two focuses with my summer cooking: 1.) Trying to use seasonal ingredients as much as I can -- preferably purchased at the local farmer's market, if not, at Whole Foods & 2.) Avoiding turning on the oven at all costs. With that in mind, here is this week's menu.

Lunches
Chopped brown rice salad
Green salad w/strawberries
Arugula, Peach & Cheddar salad

Dinners
Flank steak stir-fry
Crockpot chicken enchilada soup
Tomato Basil Sauce w/gnocci (store bought)

Lunches this week will be variations for greens and berries. As for dinners ...

Grilled mahi-mahi & asparagus w/lemon butter
Beef & asparagus negimaki rolls
Bean Burritos
Pinto Bean sloppy joes

Additionally, I'm going to make this potato salad to have as a side with the fish and beef dinners.

Food this week - 6.1.14-6.6.14

Lunches:
Green salad with strawberries
Roasted strawberry & asparagus quinoa salad

Dinners: (have leftovers of veggie enchiladas still)
Veggie stir-fry (own recipe)
Mirin-poached salmon (I'm making it with cod, because there was only one tiny piece of Mahi-Mahi left at the grocery store. That said -- weird story: I've been thinking about this recipe for awhile, and finally decided to find it on this here blog...and, coincidentally, I last made it this same week in 2013. Weird, right? No? Okay.)
