Dinner this week - 7.29.12 - 8.4.12

As with the past few weeks, I begin this week in a one recipe deficit. I've not yet made the lentil curry from last week's menus, so that will be this evening...as for the rest of the week...

Pizza - I have a frozen dough left over from a week or so ago (they were sold in twos)...I've never made pizza sauce before, so I'm going to try this recipe.

Dinner this week - 7.22.12 - 7.26.12

Last week I ended up making barbecue chicken thighs instead of the Crispy Lemonade Chicken as advertised, so the lemonade chicken has been moved to this week.

In addition, we'll be having...

Penne and meatballs. The meatballs are my own recipe, but they're loosely based on Alton Brown's baked meatballs.

Dinner this week - 7.15.12 - 7.19.12

Due to some changes in schedule, we did not get to the salmon, nor the stacked enchiladas last week, so those are on the menu for the first two days of this week...In addition, we'll be having:

Spinach and Goat Cheese pizza

Crunchy lemonade drumsticks

Penne w/roasted asparagus and balsamic butter

Weekends are reserved for takeout and leftovers...

Dinner this week - 7.8.12 - 7.13.12

We didn't get to one recipe last week...the Zucchini and Corn Taco Seasoned Quinoa Salad so that will come out at some point...in addition, we'll be having...


Three Bean Chili (we use store bought wild rice)

Dinner this week - 7.1.12 - 7.6.12

This post is rather late. We were sans internet/cable following a very large storm in the area, so I was unable to post for a few days. So here's what we've already eaten, and will eat, this week. I might add, we're on quite the lentil and quinoa kick here as we're trying to limit meat consumption...

Lentil Sloppy Joes (Please heed my note on this one. The recipe's cook time for lentils was not long enough for me. Cook lentils to package instructions, or research online for cook time for your specific lentils and then follow recipe for the rest.)

Dal Nirvana (See previous entry for link. We had this last week and loved it. We had ingredients leftover so...)

Barbecued Chicken Legs (No recipe. Homemade barbecue sauce on chicken legs. Baked chicken legs on 400 for 20 minutes with just seasoned salt. Then covered them with barbecue sauce and baked for 25 minutes - flipping and covering them with barbecue sauce every five mins. It was lovely.)

Lobster tails w/Quinoa Apple Salad (No recipe for the tails. Just cut them open, smother in melted butter and bake.)

Pasta primavera (No recipe again. SORRY! Basically just roast up some veggies and mix them into cooked penne.)
