Food this week - 6.30.13-7.6.13

We were away last week and still have some un-cooked food for the week coming up.

Lunches will include:

Quinoa Apple Salad w/Curry Dressing

Curried Zucchini & Couscous

Dinners:

Grilled Mahi-Mahi & Asparagus w/Lemon butter

Skillet hash with Spinach

Summer vegetable stew

And we may (indoor) grill some burgers on the fourth of July...and if I'm feeling SUPER motivated, I may just make Eating Well's Flag Cake.

Food this week - 6.2.13-6.8.13

It's been nearly a month since I last posted! Things got a little hectic here with school work, a graduation, and a quick trip to Phoenix. I'm back for a few weeks before a work trip. Here's what we're eating this week. Note: I recently subscribed to Eating Well magazine, so a number of these recipes come from that.

Lunch salads:

Spinach Salad with Avocado Ranch Dressing

Black Bean-Quinoa salad w/basil lemon dressing

Quinoa and Apple Salad with curry dressing

Dinners:

cheeseburgers

veggie stir-fry (I use this teriyaki sauce)

Mirin Poached Salmon

Grilled Portobellos with Chopped Salad
