Food this week - 2.23.14-3.1.14

Hello. Welcome back. I didn't post last week because I was on a weeklong work trip. Of course this means I neither cooked for myself nor ate as healthy as I'm used to. So this week I've got an eye towards eating better foods.

Lunches:
Pasta salad (my own recipe -- very veggie heavy)
Quinoa Green Goddess bowls
Egyptian edamame stew w/brown rice

Dinners:
Cheeseburgers, asparagus, potato wedges (I was feeling very protein deficient last week, so my go-to for that is always cheeseburgers ... w/grass-fed beef of course.)
Chipotle bean burritos w/rice (a quick weekday meal)
Shepherd's Pie (I use this recipe as a base but dress it up a little bit.)

Snacks:
Peanut butter pretzel granola bars (I've been making granola bars at home a lot lately, this is a new recipe for me.)
Sour Cream Coffee Cake (I don't know if I'll actually make this. I've just got an urge to bake, but not enough time for something complicated. This looks like a good, easy option should I decide to do that.)

Food this week - 2.9.14-2.15.14

This week is a little different for a few reasons:
1.) I have a lot of work stuff going on where lunches are provided, so I don't need to make many this week.
2.) It's my birthday week so there are some birthday-related outings that include dinner.
3.) My Valentine's date includes a take-out dinner, so that's another evening off the list.
4.) There's a snow storm coming ... why does that matter? Well, despite buying all the ingredients for the food below, we're making a special trip out tonight for crap food to stock our house with: boxed mac and cheese, chicken for chicken tenders, etc. If we're gonna be snowed in, we want be indulgent about it.

On that note, on with the show ...

Lunches:
Simple -- the brown rice & lentil salad left over from last week & pasta w/some marinara sauce still left over from last week.

Dinners:
Curry Scallops and Cilantro citrus rice
Creamy roasted tomato soup
Pasta Fagioli

Valentine's Day:
Cherry-Limeade Sangria
Red Velvet Brownies

Food this week - 2.2.14-2.8.14

We're a tiny bit behind still, so again, only two lunches and two dinners...but they'll be good ones!

Lunches:
Fruit, Nut & Gorgonzola quinoa salad
Rice & Lentil Salad

Dinners:
(store bought) ravioli w/marinara
beef stroganoff
