Pizza (didn't make it a week or so back when I wanted to)

Food this week -- The Thanksgiving 2013 edition

It's Thanksgiving week, so we'll spend our first couple days eating pretty easy meals, then (hopefully) eating Thanksgiving leftover for the remainder of the week! W00T! No complaints here.

So for our normal (read: non-Thanksgiving) days, we'll be doing corn & potato chowder and pizza (homemade of course!).

As for Thanksgiving we have some big plans...

Breakfast: Apple cider donut muffins

Lunch/Dinner:

Bay Spiced roast turkey with celery root gravy
Crabcake stuffing
Maple Dijon brussel sprouts
Pomegranate glazed carrots
Cranberry pear compote
Cream biscuits

And, my favorite dessert to make and consume: Caramel apple cheesecake bars. (And I'm going to try making homemade vanilla ice cream, just for fun.)

Food this week - 10.27.13-11.2.13

So...the last you heard from me was two weeks ago...during that week I made a large slow cooker batch of Chicken taco bowls and it lasted pretty much the entire week. Thus, last week I had to use up a lot of the food I bought for the week prior...BUT...half way through the week I came down with a cold and transitioned to a diet of toast, orange juice and canned soup. In other words, I STILL have not finished my meal plan from two weeks ago. All I have left to make is the eggplant and luckily they're still good, so no wasted food.

For the remainder of the week we'll be doing...

My own version of this southwestern salad, as well as mexican roasted chickpea and quinoa salad for lunches.

For dinners, we've got Balsamic roasted chicken, and 8-layer taco salad.

I've also got stuff to make pizza later in the week if necessary. :)

Dinners:

Pasta Fagioli (because it's finally fall, which means SOUP WEATHER!)

Warm tortellini & cherry tomato salad
Qunioa & Apple honey curry salad

Because I have a day off from work today, I bought some stuff to do some extra cooking.

Food this week - 9.6.13-9.12.13

Hello. I didn't post last week because I had work events nearly every night of the week which kept me well fed. But those days are behind us, so I'm back to lunch and dinner making.

This week, our dinners will be fairly simple, as we have a few outings planned.

Dinners:
Cheeseburgers w/corn on the cob, and seasoned roasted broccoli (all farmer's market buys)
Bean & Cheese enchiladas w/brown rice and simple salad (i.e. -- salad mix & cherry tomatoes, also farmer's market purchases)
Hawaiian-Style sloppy joes w/simple salad

Lunches:
leftover lentil soup I made yesterday which is slightly based on this recipe
Egyptian Edamame Stew
Arugula, Peach & Cheddar salad

I'm only planning Monday-Friday meals this week, because we have a pretty packed weekend coming up. We didn't get to the Shepard's pie or the roasted vegetable salad from last week yet, so those are up first. After that...

Food this week - 9.15.13-9.21.13

This past week was J's birthday, which we celebrated out and about, so this evening, we had his at-home birthday dinner.

Indeed it was an exact replica of last year's birthday dinner. He loved it so much last year, he requested it just always be his birthday dinner.

I made this lobster tail recipe, along with parmesan and garlic chili oil grilled zucchini, and corn on the cob.

The remainder of this week's food is as follows...

Dinner:
Shrimp soft tacos
Roasted tomato/basil soup & grilled cheese (it's tomato season after all, what better recipe to enjoy the "farmer's market  bounty")
Shepherd's pie

Lunch:
Quinoa and apple salad with honey curry dressing
Roasted vegetable salad w/goat cheese

Food this week - 8.11.13-8.17.13

I've been really horrible at updating here lately. I turned in my master's thesis this past week, so things finally feel as if they're calming down. Perhaps I will now be a bit more consistent in my posting.
Sadly, this week, many of the foods we'll be enjoying do not have recipes, but I'll share what I can...
For dinner this week, we'll be having:
Crabcakes -- no recipe, we buy them from the fish dude at the farmer's market and they are aMAHzing.
Pizza -- I use a frozen crust (Real NY Pizza Dough), this sauce, and then top with chopped spinach, artichokes, sliced tomatoes, black olives, and feta.
Lentil Soup -- weird choice for a very warm and humid summer, but I have a lot of lentils sitting in my cabinet waiting to be used.

For lunches this week we'll be having:
Romaine salad w/green and red peppers, tomatoes, black beans and corn.
Blender Gazpacho made with this bread.
Pasta salad of my own recipe -- includes roasted yellow & red peppers, broccoli and tomatoes.
Burrito salad using my own guac recipe

I think that's it for this week. I will try to be more diligent next week!

Food this week (7.14.13-7.20.13)...and last

There is a lot of scrambling going on in my life at  the moment...trying to get a thesis project done so I can start living my life again...a couple major projects at work. Needless to say, last week's menu did not get posted. So, for posterity's sake, I'll throw it in here.

And we may (indoor) grill some burgers on the fourth of July...and if I'm feeling SUPER motivated, I may just make Eating Well's Flag Cake.

It's been nearly a month since I last posted! Things got a little hectic here with school work, a graduation, and a quick trip to Phoenix. I'm back for a few weeks before a work trip. Here's what we're eating this week. Note: I recently subscribed to Eating Well magazine, so a number of these recipes come from that.

Due to an illness last week, we're still working through some of last week's recipes. To which we will add:

And we'll be making a mango/lime sorbet at some point...still researching that one!

I was out of town for some of last week, so a lot of my 'meals' came from restaurants...when I got back to town we ate a lot of leftovers from the previous week.

Food this week - 3.3.13-3.9.13

We'll be making some repeats from recent weeks.

The lentil soup and tortellini salad from last week will be revisited. In addition, we'll be making our homemade guac, salsa and hummus (see previous weeks).

As for additional dinners we've got:

Linguini with Spicy Shrimp

and

Shepherd's pie that combines that recipe with this one and these mashed potatoes.

Edamame Stew


AND - we'll be christening our ice cream maker by trying out this pink grapefruit sorbet recipe.

Things have changed around here. We've begun making only 3-4 dinners per week, and eating leftovers certain nights...AND we've begun making salads for lunches...So here are our lunches and dinners this week...

We're trying something new this week...Instead of bringing leftovers to work for lunch, we're bringing salads. And instead of making six or seven dinners this week, we're making five and having a couple days of eating leftovers. Here's what we've got:
