I'm not sure yet what we will do for your New Year's Eve/New Year's Day food. I suspect there may be some special dinners or perhaps takeout. But for our non-holiday days, here's what we're doing.

Food this week - 12.14.14-12.20.14

Last week I flew solo, so I made a big pot of turkey soup at the beginning of the week, along with an enchilada casserole and basically survived off those two things (with some pasta and salad thrown in for variety) the entire week. Back to cooking this week ...

Thanksgiving week always throws the menus off a little. What's below is our more or less regular food for the week, plus the dessert I am bringing to Friendsgiving on Thursday. Next week I will share the recipes I make for my at-home Thanksgiving dinner on Friday.

Our menu this week is a little sparse: partly because I have some lunch salad stuff leftover from last week, but also because yesterday, in the middle of the grocery store I decided to nix something from the menu. So...at some point this week I need to find a replacement for that dinner and doing a second grocery shopping trip. Sadly.

Food this week - 9.21.14-9.27.14

Well, it took awhile, but we made a very big move. Across country. As such, a lot of the food we've been eating for the last four weeks has been ... well ... not-so-great. There was the packing week, when we were mostly getting take out because we didn't have time to stop and cook. Then the driving week, when we were at the mercy of the restaurants immediately off the highway. And, of course, unpacking week, when we didn't have enough cooking and eating utensils unpacked, nor the time to cook proper meals and ended up eating a lot of pre-prepared, frozen and/or canned foods.

Now we're unpacked, the kitchen stuff anyway. We've found our grocery stores, visited the farmer's market, and we're ready to begin cooking again. Here's how our week in food is looking:

Sorry for the hiatus. We were traveling for about ten days earlier this month and returned to some late-summer colds, so  first we didn't require much in terms of food. Then, we required a lot of canned soup and various frozen juice delicacies. We're back to solid foods now, though. Here's what's on our menu this week:

These should look familiar by now, I've been making them for the last few weeks, but they're SO good and the ingredients are all in season, so there's no reason to stop making them.

I still haven't made the tomato-basil sauce from last week's menu. The crockpot enchilada soup made WAY more than expected, so we're still working through it. We'll also probably make burgers and pasta salad for our "Stay-in-and-stream-Netflix" Fourth of July celebration. Not sure yet...

I have two focuses with my summer cooking: 1.) Trying to use seasonal ingredients as much as I can -- preferably purchased at the local farmer's market, if not, at Whole Foods & 2.) Avoiding turning on the oven at all costs. With that in mind, here is this week's menu.

Mirin-poached salmon (I'm making it with cod, because there was only one tiny piece of Mahi-Mahi left at the grocery store. That said -- weird story: I've been thinking about this recipe for awhile, and finally decided to find it on this here blog...and, coincidentally, I last made it this same week in 2013. Weird, right? No? Okay.)

I'm not doing lunch salads this week, because I'm working on some stuff that's due very soon and I want to get it done asap. So lunches this week will be sandwiches with a very simple green salad accompaniment.

As for dinners ...

Barbecued Beef Sandwiches
Chili lime shrimp skewers (if it's not too hot to put the oven on, I'll make these oven baked fries)
Slow cooker veggie enchiladas - I'm not following this recipe exactly, just using it as a base. I already have my own enchilada sauce recipe that I like and I'll be adding a lot more in terms of seasoning to the veggies.

Food this week -- 3.16.14-3.22.14

For a variety of reasons, we have more than enough lunch foods left over from last week, so this week will be strictly dinners.

Spaghetti with this marinara sauce and my own meatball recipe which is kind of a combo of this and this.
Honey mustard glazed salmon steaks with grilled asparagus.
Vegetarian gumbo (Note, I make a LOT of changes, the recipe linked is just sort of my base.)

And just for fun this week, I'm going to try this Copycat Starbucks oatmeal for breakfast.

Food this week - 2.23.14-3.1.14

Hello. Welcome back. I didn't post last week because I was on a weeklong work trip. Of course this means I neither cooked for myself nor ate as healthy as I'm used to. So this week I've got an eye towards eating better foods.

Lunches:
Pasta salad (my own recipe -- very veggie heavy)
Quinoa Green Goddess bowls
Egyptian edamame stew w/brown rice

Dinners:
Cheeseburgers, asparagus, potato wedges (I was feeling very protein deficient last week, so my go-to for that is always cheeseburgers ... w/grass-fed beef of course.)
Chipotle bean burritos w/rice (a quick weekday meal)
Shepherd's Pie (I use this recipe as a base but dress it up a little bit.)

Snacks:
Peanut butter pretzel granola bars (I've been making granola bars at home a lot lately, this is a new recipe for me.)
Sour Cream Coffee Cake (I don't know if I'll actually make this. I've just got an urge to bake, but not enough time for something complicated. This looks like a good, easy option should I decide to do that.)

Food this week - 2.9.14-2.15.14

This week is a little different for a few reasons:
1.) I have a lot of work stuff going on where lunches are provided, so I don't need to make many this week.
2.) It's my birthday week so there are some birthday-related outings that include dinner.
3.) My Valentine's date includes a take-out dinner, so that's another evening off the list.
4.) There's a snow storm coming ... why does that matter? Well, despite buying all the ingredients for the food below, we're making a special trip out tonight for crap food to stock our house with: boxed mac and cheese, chicken for chicken tenders, etc. If we're gonna be snowed in, we want be indulgent about it.

On that note, on with the show ...

Simple -- the brown rice & lentil salad left over from last week & pasta w/some marinara sauce still left over from last week.

Dinners:
Curry Scallops and Cilantro citrus rice
Creamy roasted tomato soup
