Food this week (7.14.13-7.20.13)...and last

There is a lot of scrambling going on in my life at  the moment...trying to get a thesis project done so I can start living my life again...a couple major projects at work. Needless to say, last week's menu did not get posted. So, for posterity's sake, I'll throw it in here.

This week, lunches:
Leftovers of pinto bean stew (see below)
Pasta salad (my own recipe)
Spinach Quinoa Salad (with roasted grapes and pears)

Dinners:
Sweet and Smokey Barbeque Shrimp
Honey Sesame Chicken
Penne w/Roasted asparagus and balsamic buter

As for last week...lunches included:
Leftovers from Summer Vegetable Stew
Curried Zucchini Couscous

Dinners:
Scallop and Pepper Tacos
8-layer taco salad
Slow-cooker Pinto Bean Stew

Food this week - 6.30.13-7.6.13

We were away last week and still have some un-cooked food for the week coming up.

Lunches will include:

Quinoa Apple Salad w/Curry Dressing

Curried Zucchini & Couscous

Dinners:

Grilled Mahi-Mahi & Asparagus w/Lemon butter

Skillet hash with Spinach

Summer vegetable stew

And we may (indoor) grill some burgers on the fourth of July...and if I'm feeling SUPER motivated, I may just make Eating Well's Flag Cake.

Food this week - 6.2.13-6.8.13

It's been nearly a month since I last posted! Things got a little hectic here with school work, a graduation, and a quick trip to Phoenix. I'm back for a few weeks before a work trip. Here's what we're eating this week. Note: I recently subscribed to Eating Well magazine, so a number of these recipes come from that.

Lunch salads:

Spinach Salad with Avocado Ranch Dressing

Black Bean-Quinoa salad w/basil lemon dressing

Quinoa and Apple Salad with curry dressing

Dinners:

cheeseburgers

veggie stir-fry (I use this teriyaki sauce)

Mirin Poached Salmon

Grilled Portobellos with Chopped Salad

Food this week - 5.5.13-5.10.13

Due to an illness last week, we're still working through some of last week's recipes. To which we will add:

Fish & Literally Chips

Roasted chicken drumsticks & potatoes w/Mojo sauce

And we'll be making a mango/lime sorbet at some point...still researching that one!

Also, want to post this recipe I just found. Normally I would pin such things, but it does not have an image. At least if it's here, I'll know where to find it!
