Food this week - 11.9.14-11.15.14

I'm coming off of a severe cold, so I'm taking it easy on the cooking this week. There will be a lot of easy meals that will at times double as lunches, so I won't separate the two.

This is the food I am making this week:

Egyptian Edamame Stew
Penne w/Roasted Asparagus and Balsamic Brown butter
Flank Steak Stir Fry
Chicken Tortilla Soup

Food this week - 10.26.14-11.1.14

I didn't post last week because I was flying solo, so I was basically eating rando leftovers from the week before. Now that my guy is back, I'm back to full-fledged meals ... Here we go ...

Lunches
the Chipotle Chopped salad I didn't make two weeks ago
Quinoa, brusseles sprouts and pecan salad

Dinners
Frito Pie
Santa Fe Grilled Chicken sandwiches
Broccoli Cheese soup

Food this week - 10.5.14-10.11.14

Our menu this week is a little sparse: partly because I have some lunch salad stuff leftover from last week, but also because yesterday, in the middle of the grocery store I decided to nix something from the menu. So...at some point this week I need to find a replacement for that dinner and doing a second grocery shopping trip. Sadly.

Lunch
Barley & Bean salad

Dinners
Eating Well King Ranch casserole
Spinach & Gruyere stuffed tilapia

Food this week - 9.28.14-10.4.14

Still getting settled into our new abode, as well as our new city. We have a WONDERFUL local farmer's market, so we were lucky enough to get some great produce for this week's meals.

Dinner
Smokey brown butter shrimp w/gouda grits
Southwestern beef and bean burger wraps
Black bean soup

Lunches
Apple pecan salad
Summer corn/barley salad

Food this week - 9.21.14-9.27.14

Well, it took awhile, but we made a very big move. Across country. As such, a lot of the food we've been eating for the last four weeks has been ... well ... not-so-great. There was the packing week, when we were mostly getting take out because we didn't have time to stop and cook. Then the driving week, when we were at the mercy of the restaurants immediately off the highway. And, of course, unpacking week, when we didn't have enough cooking and eating utensils unpacked, nor the time to cook proper meals and ended up eating a lot of pre-prepared, frozen and/or canned foods.

Now we're unpacked, the kitchen stuff anyway. We've found our grocery stores, visited the farmer's market, and we're ready to begin cooking again. Here's how our week in food is looking:

Dinners
Grilled Tilapia Bowls
Red Lentils and Spinach masala
Roasted tomato & basil soup

Lunch
Arugula/Peach/Cheddar salad
Roasted cauliflower/chickpea salad
