Hello again! You may have noticed my two week absence. I was on vacation last week (eating lots of wonderful fattening things) and so I spent the week prior going through ALL the leftovers in the refrigerator.
But alas, we are back to making dinners and this week's menus focus on veggies in the hopes to, ahem, cleanse our bodies of some of the gross (read: fabulous) stuff we ate last week...
8.25.12 - California Chipotle Chopped Salad w/Barbecue Chicken (I have a ton of left over barbecued chicken from our vacation that I will be shredding and putting on top of this.)
8.26.12 - Veggie Stir-Fry (my own recipe)
8.27.12 - Southwestern Black Bean, Quinoa, Mango medley
8.28.12 - Pasta w/shrimp, asparagus and herbed goat cheese
8.29.12 - Taco Chicken Bowls
8.30.12 - Mexican stuffed peppers (the recipe linked is rather bland, I add a lot of spices to taste)

Dinner this week - 8.5.12 - 8.9.12
Unfortunately all of our area Whole Foods were out of tilapia this week, so we're hoping to find tilapia today as we have the rest of the ingredients necessary for the tilapia on last week's menu. As for the rest of the week...
